The Almol difference is in the detail. Almol specifies Hog Casings are pre-flush cutting only where there are holes to separating shorts, medium & long lengths before selection of calibration. Then during selection selectors are advised to select short, medium and long strands separately. Under no circumstance are selectors to further cut short strands, medium strands can be cut only once and long strands are selected in the conventional manner. Although this adds to the selection cost there are significant gains obtained by improvement in strand length compared to traditional full selection where water is flushed through the casing once and product can be cut only to find there is a whole 1 or 2 meter further down the casings.

Our aim is to make a strict selected casing that has the longest possible strands. What we also understand better than others is it is not only with minimum length but how many long shorts are in each bundle that can cause big problems with sausage makes.
